Broccoli Popcorn

    (Also great with cauliflower!)

  • 1 head broccoli, cut into medium sized florets, discard stems

  • ½ teaspoon salt

  • 1 teaspoons sugar

  • ¼ teaspoon onion powder

  • ¼ teaspoon garlic powder

  • ½ teaspoon paprika

  • ½ teaspoon turmeric

  • 1 tablespoons water

  • 1/3 cup water or vegetable broth

  1. In a small bowl, combine the salt, sugar, onion powder, garlic powder, paprika, and turmeric. Set aside.

  2. Add 1 TBS water into nonstick pan.

  3. Heat briefly over medium heat and add broccoli florets.

  4. Stir to coat broccoli with water.

  5. Sprinkle seasoning mix over vegetables and stir to mix. Add water/broth to pan, cover immediately and steam for about 6 minutes over low heat.

  6. Remove cover and check broccoli.

  7. If broccoli is not soft enough for your liking, cover and steam an additional 2 minutes.

Yield: 4-5 servings

Note: If following a low FODMAP eating pattern, leave out the garlic and onion powders and use smoked instead of regular paprika.
