Arugula Smoothie

Ingredients:

  • 1 trimmed, seeded and chopped red bell pepper

  • +/- 1 cup fresh or frozen strawberries

  • 3 - 4 peeled tangerines (center pith removed)

  • ½ cup raw coconut water

  • 1 tablespoon ground flax or chia seeds

  • ¼ teaspoon ground turmeric

  • 1/8 teaspoon ground black pepper

  • 1 teaspoon maple syrup (optional)

Directions:

Place all ingredients in a high-speed blender and blend until smooth.  If using fresh strawberries, add 1-2 ice-cubes.

Note: the pepper and turmeric will give this smoothie a nice spiciness to it.  Don’t shy away from using these highly anti-inflammatory ingredients.  The flavor is different, but really tasty.

Hint: to save time on busy mornings, place all ingredients in a bowl or in the blender jar the night before and store in fridge until ready to blend.
