Raw Cranberry Sauce

Cranberries are not only for the holidays. They are a fantastic addition to your regular routine, especially if you crave something slightly tart and slightly sweet. Cranberries are a good source of many nutrients including vitamin C, manganese, vitamin E, vitamin K1 and copper plus antioxidants like quercetin and cyanidin. This recipe is quick and easy since it requires no cooking. If you have a small food processor it takes only a few minutes to put together. Enjoy on oats, yogurt or as a relish on tacos. Yum!

Ingredients:

  • 1 10 oz. bag frozen cranberries, defrosted but not heated

  • 1 large navel orange, zested and juiced

  • 1 teaspoon ground cinnamon

  • 1/8 to ¼ teaspoon ground cloves

  • 4 teaspoons maple syrup

Instructions:

  1. Roughly chop the cranberries by hand or in a small food processor and transfer them to a small mixing bowl.

  2. Add zest and juice from the orange.

  3. Mix in spices and maple syrup.

  4. Transfer to a tightly sealed jar – keeps in refrigerator for 5-7 days.
